I Dropped The Ball...

... I was totally gonna food blog some of the recipes that we're making for Thanksgiving.  And I already missed the one I really wanted to do. Cause my kitchen is just too dern messy to photograph at the moment.  I will, however, give you the recipe....

It's a family recipe and has been passed down so often that I am not even sure anyone knows the name of it anymore.  But I can tell you that it is, far and away, my favorite food on.the.stinkin.planet.  And so I have named it appropriately ....

Cranberry Yum

Ingredients:
1 Package Cranberries (frozen)
1 Cup Crushed Pecans
1 Can (@ 20oz) Crushed Pineapple
1 Package Mini Marshmallows (optional)
1 1/2 Cup Sugar
1 Large Tub of Whipped Cream
(OR 1 Pint Whipping Cream & 1/2 Cup Sugar - whipped to whip cream consistency)

Grind FROZEN cranberries into VERY small pieces.  Crush or grind pecans (NOTE: If you choose to crush the pecans yourself, put them in baggie, seal and crush with rolling pin ... do NOT attempt to beat them with a  meat tenderizer hammer thingy - your bag will not survive and you will be picking pecans out of your socks for a very long time ... not that I have ever done that **ahem**).  Drain pineapple (remove as much juice as possible - this keeps it from freezing rock hard later, making it easier to eat fresh out of the freezer, right out of the container with a big ol spoon.  This I DO know from experience!!)

Combine all ingredients in a large bowl and mix thoroughly.  Place in freezable container - I use one larger and a few smaller plastic containers - and place in freezer for a minimum of 2 hrs.  Remove from freezer with enough time to spare for softening but NOT for complete thawing.  

There ya have it.  We will be making cheesecakes tomorrow morning and I will try to take pictures and post those recipes later.
